Thanksgiving just keeps on giving!

1 dried out, week old Thanksgiving turkey carcass
14 quarts water
4 carrots
1/2 celery bunch that froze in the back of the fridge
6 old, shriveled mushrooms
1 sad, wilted onion
Pepper, bay leaves, sage, rosemary, whatever you fancy
(Really, you can use any sad, wilted, dried out, old, otherwise unappetizing to eat veggies that are supposed to be “fresh”)

Cover pot. Bring to boil. Immediately turn down to simmer ALL day. Strain out bones, mushy veggies, etc., from the stock liquid. Feed strained out contents to chickens, if you have them, or throw in compost.
Place the strained stock into glass Mason jars or plastic containers and freeze! Be sure to label containers with contents and date!
